# Successful Focaccia

Three small yeasted focaccias with olive oil, which I top with coarse salt and rosemary and bake until golden.

## What you need

- 2¾ cups All-purpose flour
- 1 tbsp Dry yeast
- 1 tsp Sugar
- 1 tsp Salt
- ¼ cup Olive oil (plus more for drizzling)
- ¾ cup Lukewarm water

### For sprinkling

- Coarse salt
- Rosemary

## How I make it

1. In a mixer bowl, put the flour, sugar, salt, and olive oil.
2. Put the yeast in the water and stir.
3. Gradually add the water to the flour and mix until the dough is smooth and pliable.
4. Let rise for 45 minutes.
5. Punch down the dough and divide it into three balls. Let rise a second time for 20 minutes.
6. Roll out each ball into a flat sheet and let rest for 10 minutes. Meanwhile, preheat the oven to 435°F.
7. Press dimples into the dough with your fingers, drizzle with olive oil, and sprinkle with a little coarse salt and rosemary.
8. Bake for 20 minutes, until golden.
