# Red Cabbage Salad Like the Falafel Shop

My red cabbage salad, like the one at the falafel stand: sliced very thin with lemon, garlic and oil, and left to soften a little before serving.

## What you need

- Red cabbage
- ¼ cup Oil
- ¼ cup Water
- 1 clove Garlic (Adjust to the amount of cabbage)
- Juice of 1 whole lemon
- Salt, black pepper

## How I make it

1. Cut the cabbage into very thin strips.
2. Soak in salted water for at least five minutes, then drain.
3. Add 1/4 cup water, the oil and the salt, grate in the garlic, and add the lemon juice.
4. Mix well and wait for the cabbage to wilt slightly.
