# Pancakes

Simple two-bowl pancakes that I serve with maple syrup or a warm chocolate sauce.

## What you need

### Pancakes

- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- 2 large eggs
- 1¼ cups milk
- 2 tbsp vegetable oil
- 1 tsp vanilla extract

### Chocolate sauce

- 3½ oz bittersweet chocolate
- 7 tbsp heavy cream
- 1½ tbsp butter

## How I make it

### Pancakes

1. In a bowl, mix the flour, sugar and baking powder.
2. In a separate bowl, whisk the eggs, oil, vanilla and milk.
3. Combine the two into a smooth, slightly thick batter.
4. Lightly grease a flat skillet and heat it well.
5. Pour batter into the pan to make a circle the size you like.
6. When bubbles start to appear, flip and cook a few seconds more, until the other side is browned.
7. Repeat until the batter is used up. Serve with maple syrup or chocolate sauce.

### Chocolate sauce

1. Put all the ingredients in a saucepan and cook over low heat until thick and smooth.
