# Muffins from the Booklet

Simple butter muffins made with a cup of eshel, which I change up each time with chocolate chips, nuts, coconut, raisins or blueberries.

## What you need

- 1½ cups sugar
- 7 oz butter
- 4 large eggs
- 3¼ cups all-purpose flour
- 2½ tsp baking powder (one 10 g packet)
- 1 tsp vanilla extract
- 1 eshel or buttermilk (a 200 ml cup (about ¾ cup + 1 tbsp))
- ¼ cup milk

### Optional add-ins

- chocolate chips [optional]
- nuts [optional]
- shredded coconut [optional]
- raisins [optional]
- blueberries [optional]

## How I make it

1. Preheat the oven to 350°F (180°C).
2. Beat the butter and sugar together well.
3. Add the eggs one at a time.
4. Add the remaining ingredients and mix until smooth. Stir in an add-in, if you like.
5. Divide the batter among the cups of a muffin pan.
6. Bake for about 20 minutes.
