# Moroccan Potato Cigars

Fried Moroccan cigars filled with mashed potatoes, garlic, and cilantro. I serve them hot, straight from the oil.

## What you need

### For the filling

- 4 Potatoes, boiled and peeled
- 6 cloves Garlic, crushed
- 1 bunch Cilantro, chopped
- Salt and pepper (To taste)
- 2 tbsp Oil
- Turmeric (Just a little)

### For rolling and frying

- 1 package Cigar wrappers
- A little flour and water (For the paste)
- Oil for deep frying

## How I make it

### The filling

1. Mash the potatoes until smooth, as for mashed potatoes.
2. Lightly sauté the garlic in the oil, then add it to the mashed potatoes.
3. Add the remaining ingredients and mix into an even mixture.

### Folding and frying

1. For triangles: Fold the right and left edges of the cigar wrapper in slightly to form a long strip. Place a tablespoon of the potato mixture at the end closest to you, then fold alternately to the right and to the left to form a triangle. Tuck the remainder of the wrapper inside so the filling does not escape during frying.
2. For rolls, egg roll style: Place a tablespoon of filling at the end closest to you, fold once over the filling, fold in the sides to form a rectangle, and roll up.
3. For rolls, make a paste from a little flour and water and use it to seal the last strip.
4. Heat a pot with deep oil and fry until golden.
5. Transfer to paper towels and serve hot.
