# Potato Latkes

Simple potato latkes of grated potato and onion, fried until golden, the way I make them for Hanukkah.

## What you need

- 5 potatoes
- 1 small onion
- 3 tbsp all-purpose flour (or 2 tbsp self-rising flour)
- 1 tsp salt
- 1 large egg
- oil for frying

## How I make it

1. Grate the potatoes and onion, squeeze out the liquid well and put them in a bowl.
2. Add the flour, salt and egg and mix until evenly combined.
3. Heat oil in a skillet and drop in mounds of the mixture, any size you like.
4. Fry until golden underneath, then flip and fry the other side.
5. Drain on paper towels.
6. Serve with sour cream, sugar, applesauce or any topping you like.
