# Krupnik Soup (Barley Soup)

A thick barley soup with meat, chicken wings, vegetables, and mushrooms. I cook it until the meat is tender and thicken it with another handful of barley if it needs it.

## What you need

- ½ cup Pearl barley, rinsed (and maybe another handful)
- ½ lb Beef chuck or flanken (optional)
- 2 Chicken wings (optional)
- 2 Carrots, peeled
- 2 Potatoes, peeled and quartered
- 1 Onion, peeled and quartered
- 10 Mushrooms, quartered
- Chicken stock (or 4 tablespoons onion soup powder and 2 tablespoons mushroom soup powder)
- Salt, pepper

## How I make it

1. Put the meat, chicken wings, and barley in a pot. Add water to three-quarters of the height of the pot and bring to a boil.
2. Skim off the foam with a fine strainer.
3. Add the vegetables, except the mushrooms, and cook for about 30 minutes over medium heat.
4. Add the mushrooms, salt, pepper, and soup stock.
5. Cook until the meat is tender. If the soup is not thick enough, add another handful of barley.
6. Taste and adjust the seasoning as needed.
