# Honey Rolls

Soft yeast rolls sweetened with honey, brushed with butter and honey before baking.

## What you need

### Dough

- 2 tsp active dry yeast
- 1 cup lukewarm water
- ¼ cup honey
- 1 tsp salt
- 1 large egg
- 3 cups all-purpose flour

### Glaze

- 1 tbsp butter, melted
- 1 tbsp honey

## How I make it

1. Pour the water into a large mixing bowl and sprinkle the yeast over it. Wait about 5 minutes, until the yeast starts to bubble gently.
2. Add the honey, salt and egg and stir until smooth.
3. Add the flour and stir until a dough forms.
4. Knead for 7-8 minutes, by hand or with the dough hook of a stand mixer, until elastic.
5. Transfer the dough to a large bowl, cover with a towel or plastic wrap and let rise in a warm spot for about 2 hours, until doubled.
6. Punch down the dough and divide it into 12 equal pieces.
7. Shape into round rolls and set them on a baking sheet lined with lightly greased parchment paper.
8. Cover with a clean towel and let rise again for about 20 minutes. Meanwhile, preheat the oven to 400°F (200°C).
9. In a small bowl, mix the butter and honey and gently brush it over the risen rolls.
10. Bake for 10-13 minutes, until golden.

## What I've learned

- If the dough is very sticky I add a little flour, but carefully, never too much. The longer I knead, the easier it is to handle.
