# Honey Caramel Petits Fours

Bite-size shortcrust tartlets baked in a mini muffin pan, with a honey and brown sugar filling that puffs slightly and caramelizes in the oven.

## What you need

### Dough

- 7 tbsp cold butter (cubed)
- 1¼ cups all-purpose flour
- 1 egg yolk
- 1 tsp honey
- ⅜ cup powdered sugar

### Filling

- ½ cup honey
- ½ cup brown sugar
- 2 large eggs
- 5½ tbsp butter, melted
- ½ tsp vanilla extract
- 2 tbsp all-purpose flour

### Decoration

- white chocolate [optional]

## How I make it

### Dough

1. Pulse the dough ingredients in a food processor until crumbly.
2. Turn out and knead into a smooth dough.
3. Wrap in plastic wrap and refrigerate for at least 2 hours.

### Filling

1. In a bowl, mix the honey, brown sugar, eggs, butter, vanilla and flour until smooth.

### Assembly and baking

1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
2. Flour the counter and roll the dough out to ⅛ inch (0.3 cm) thick.
3. Cut out circles a little larger than the cups, so they line the sides too.
4. Line each cup with dough and fill to the top with the filling.
5. Bake for 15 minutes, or until the filling puffs slightly and the pastry is lightly golden.
6. Let cool. Decorate with strips of white chocolate, if you like.
