# Easy Rough Puff Pastry

A quick puff pastry I make at home from flour, grated frozen butter and ice-cold water, with a few folds that build the layers.

## What you need

- 2 cups all-purpose flour
- 1 tsp salt
- 9 oz unsalted butter, frozen
- ⅔ cup ice-cold water

## How I make it

1. Put the flour and salt in a bowl.
2. Grate the butter straight into the flour.
3. Add the water and mix the flour and butter with a spoon, then with your hands. Knead into a dough that holds together but is still a little grainy.
4. Wrap in plastic wrap and refrigerate for at least 30 minutes.
5. Roll out the dough and fold one third over the middle, then the other third on top.
6. Turn the dough 90 degrees, roll it out and fold again. Repeat 3 times.
7. Chill for 1 hour before using.

## What I've learned

- The repeated rolling and folding is what creates the layers.
