# Classic Goulash

My classic goulash, beef cubes simmered for an hour and a half with sweet and hot paprika, peppers and tomato, finished with carrots and potatoes.

## What you need

- 1 large onion, chopped
- 3 tbsp vegetable oil [kosher option, optional]
- 3 tbsp butter (not kosher in a meat dish) [not kosher, optional]
- 2¼ lb beef stew meat, cubed
- 1 tbsp all-purpose flour
- 1 green bell pepper
- 1 medium-hot green chile
- 1 ripe red tomato
- 2 cloves garlic
- 2 tbsp sweet paprika
- 1 pinch hot paprika
- 5 cups water
- a few thyme sprigs
- black pepper and salt
- 1 lb potatoes, cubed
- 1 lb carrots, cut into thick slices

## How I make it

1. Heat the oil (or butter) in a large pot and cook the onion until translucent.
2. Add the beef and brown on all sides.
3. Sprinkle the flour evenly over the beef and cook for a few minutes.
4. Add the peppers, tomato, garlic and both paprikas and stir well.
5. Add the 5 cups water, thyme, black pepper and salt and bring to a boil.
6. Cover and turn the heat to low.
7. Simmer for about 1 1/2 hours, stirring now and then, until the beef is tender.
8. Add the carrots and potatoes and cook for another 15 minutes.
9. Taste and adjust the seasoning.
