# Churros with Cinnamon Sugar

Churros from a cooked choux-style dough piped straight into hot oil, served with warm chocolate sauce for dipping or with cinnamon sugar.

## What you need

### Dough

- 1 cup water
- 7 tbsp butter or margarine
- 2–3 tbsp sugar
- 1 package vanilla sugar
- 1 pinch salt
- 1½ cups all-purpose flour, sifted
- 4 large eggs
- oil for deep frying

### Chocolate sauce

- 7 oz bittersweet chocolate
- 1 heavy cream (1 cup (250 ml))

### For dusting

- ½ cup powdered sugar or granulated sugar
- 1 tsp ground cinnamon

## How I make it

### Churros

1. In a medium saucepan, combine the water, butter (or margarine), sugar, vanilla sugar and salt. Stir over the heat until melted.
2. Add the flour, beating quickly, until the dough comes together and pulls away from the sides of the pan.
3. Remove from the heat and beat in the eggs one at a time. Mix vigorously until the dough is soft and smooth.
4. Transfer the dough to a piping bag fitted with a star tip.
5. Heat oil for deep frying.
6. Pipe 4-5 inch (10-12 cm) strips into the oil, cutting them off with a knife.
7. Fry on both sides until golden brown.

### Chocolate sauce and serving

1. Melt the chocolate with the cream in the microwave and whisk well.
2. Serve the churros with a small bowl of the chocolate sauce for dipping.
3. Or serve with a small bowl of powdered or granulated sugar for dipping, and sprinkle with cinnamon.
