# Chocolate Crinkle Cookies

Soft chocolate cookies with Irish cream and coffee, rolled in sugar and powdered sugar so they crack open in the oven.

## What you need

### Dough

- 3 large eggs, at room temperature
- ½ cup sugar
- 12 oz bittersweet chocolate
- 3½ tbsp butter
- 3 tbsp Irish cream liqueur
- 1 tsp instant coffee powder
- ¾ cup all-purpose flour (heaping)
- 1 tsp baking powder
- 1 cup almond flour

### Coating

- 1 cup sugar
- 2 cups powdered sugar

## How I make it

1. In a mixer, beat the eggs and sugar on high speed for 5 minutes, until thick and pale.
2. Meanwhile, melt the chocolate and butter together.
3. Fold the chocolate into the egg foam and add the Irish cream and coffee.
4. Add the flour, baking powder and almond flour. The batter will be thin.
5. Cover and refrigerate for 4 hours.
6. Preheat the oven to 375°F (190°C).
7. Roll the dough into balls 1¼-1½ inches (3-4 cm) across.
8. Roll each ball in sugar and then in powdered sugar, and place, spaced apart, on a baking sheet lined with parchment paper.
9. Bake for exactly 8 minutes.
