# Chicken with Olives and Rosemary

A whole chicken I roast with onions, garlic, mushrooms, olives and rosemary in red wine, until it's tender and the sauce reduces.

## What you need

- 1 whole chicken
- ½ cup olive oil
- 2 medium onions
- 4 cloves garlic
- 1 container mushrooms (about 8 oz)
- ½ cup olives
- 1 sprig rosemary
- 2 cups dry red wine
- salt and pepper

## How I make it

1. Season the chicken with salt and pepper and place it in a baking dish, skin side up.
2. Brush with olive oil and put under the broiler for a few minutes.
3. In a skillet, sauté the onions in the remaining oil and add the garlic.
4. Sauté the mushrooms separately, then add them with the onions and garlic to the chicken.
5. Scatter the olives and rosemary over the top.
6. Pour in the wine, cover and bake at 350°F (180°C) for 1 hour.
7. Uncover and bake for another 20 minutes.
