# Lemon Honey Chicken

Chicken thighs marinated in lemon juice, olive oil and garlic and baked on a bed of lemon slices, za'atar and garlic heads, for a holiday meal.

## What you need

### Marinade

- juice of 3 lemons
- ½ cup olive oil
- 7 cloves garlic, crushed
- 1 pinch coarse salt
- ½ tsp black pepper

### For the pan

- 12 chicken thighs
- 5 sprigs za'atar (or fresh oregano or thyme)
- 2 heads of garlic, halved
- 4–5 lemons, sliced

## How I make it

1. Mix the lemon juice, olive oil, crushed garlic, salt and pepper, and marinate the chicken in it for about 3 hours.
2. Spread the lemon slices in a baking dish, top with the za'atar and garlic, then the chicken. Pour the marinade over.
3. Cover with foil and bake at 350°F (180°C) for about 45 minutes.
4. Uncover and bake 20 minutes more.
