# No-Bake Cheesecake with Petit Beurre Crust

A no-bake cheesecake on a petit beurre and butter crust, with a cheese mousse and layers of chocolate pudding combed into a pattern.

## What you need

### Crust

- 1 lb petit beurre biscuits (or tea biscuits)
- 6 tbsp sugar
- 10½ oz unsalted butter
- 1 tsp vanilla extract

### Filling

- 18 oz soft white cheese (gvina levana) or quark, 9% fat
- 2 cups containers heavy cream (250 ml each)
- 1½ cups powdered sugar
- 1 package instant vanilla pudding mix
- 1 tsp vanilla extract
- 1 tsp grated lemon zest
- 2 chocolate pudding cups (such as Danone Danny)

## How I make it

### Crust

1. In a food processor, grind the biscuits finely with the sugar and transfer to a large bowl.
2. Melt the butter, pour it over the crumbs and add the vanilla.
3. Press the mixture into the pan and keep it in the fridge.

### Filling and assembly

1. Beat the cheese, cream, powdered sugar, pudding mix, vanilla and lemon zest in a mixer on high speed for about 5 minutes, until you have a thick mousse.
2. Pour half of the cheese mixture into the pan and spread one pudding cup over it.
3. Pour in the rest of the cheese mixture and spoon the second pudding cup on top in two rows. Comb through it with a fork to make a pattern.
4. Chill the cake for 3 hours before serving.
