# Caesar Salad

My Caesar salad with romaine, Parmesan, a garlic aioli dressing and homemade ciabatta croutons with oregano.

## What you need

### Salad

- 9 oz romaine lettuce (washed and torn into large pieces)
- ½ cup grated Parmesan
- ½ red onion (sliced into rings)

### Garlic aioli dressing

- 7 tbsp mayonnaise
- 1½ tbsp crushed garlic
- 1 tsp whole-grain mustard
- ½ lemon, juiced
- 4 capers
- 1 tsp chopped cilantro

### Croutons

- 1 ciabatta loaf
- 2 cloves garlic, crushed
- 1 tbsp dried oregano
- 2 tbsp olive oil

## How I make it

### Dressing

1. Blend all the dressing ingredients in a food processor until smooth. Thin with a little water if needed.

### Croutons

1. Cut the ciabatta into small cubes and put them in a bowl.
2. In a separate bowl, mix the crushed garlic, oregano and olive oil.
3. Pour the mixture over the bread cubes and toss.
4. Spread on a metal baking sheet and bake in an oven preheated to 350°F (180°C) for 10-15 minutes.

### Assembling

1. In a serving bowl, toss the lettuce, croutons and half the Parmesan with the dressing.
2. Top with the rest of the Parmesan and the red onion rings.
