# Béchamel Sauce

My basic béchamel of butter, flour and milk, made in a small pot in a few minutes and thickened just the way I need it.

## What you need

- 3½ tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk (plus more as needed)
- salt and pepper

## How I make it

1. Melt the butter in a small pot.
2. Sprinkle in the flour little by little, stirring, until the butter absorbs all of it.
3. Add the milk while stirring so no lumps form. Keep stirring until the sauce is smooth.
4. If the sauce is too thick, add more milk until it reaches the consistency you want.
5. Season with salt and pepper to taste. Remove from the heat and keep covered.
