# Baked Empanadas

Baked empanadas in a simple olive oil dough, filled with seasoned ground beef, hard-boiled egg, and olives. I bake them in the oven instead of frying.

## What you need

### For the dough

- 3 cups All-purpose flour
- ⅓ cup Olive oil (Mild Arbequina variety)
- ¾ cup Water
- 1 tsp Salt
- 1 tbsp Sugar

### For the meat filling

- 1 Large onion, chopped
- 3 cloves Garlic, chopped
- Olive oil (To taste)
- 1 lb Ground beef
- 1 tbsp Sweet paprika
- 1 tbsp Cumin
- 2 Crushed tomatoes
- 1 Hard-boiled egg, crumbled
- Chopped olives (To taste)
- Salt, white pepper

## How I make it

### The filling

1. Fry the chopped onion in the olive oil, add the chopped garlic, and stir.
2. Add the ground beef and fry, stirring, until the meat changes color.
3. Add the crushed tomatoes and the spices and cook, watching closely, until all the liquid evaporates, about 25 minutes.
4. Let cool, then add the crumbled hard-boiled egg and the chopped olives.

### The dough and baking

1. Mix all the dough ingredients and knead until the dough is smooth and pliable.
2. Roll out the dough to a sheet about 1/4 inch thick and cut out circles with a large glass.
3. Place some of the filling in the center of each circle, fold into a half-moon, and press the edges together firmly.
4. Place on a baking sheet lined with parchment paper and bake in an oven preheated to 390°F until the empanadas are nicely golden, about 30 minutes.
