# Soft French-style loaves

Three baguettes from a simple dough of flour, water, yeast and salt, baked hot with a pan of water in the oven.

## What you need

- 5 cups all-purpose flour
- 2½ tsp instant yeast
- 1⅓ cups water
- 2 tsp salt

## How I make it

1. Put the water in a stand mixer bowl.
2. Add the remaining ingredients and mix with the dough hook for about 5 minutes.
3. Turn the dough out and knead by hand for 2 more minutes.
4. Place in a bowl and let rise for about 45 minutes, or until doubled.
5. Punch down the dough and divide it into three pieces.
6. Shape each piece into a long log, place on a baking sheet and let rise again for 30 minutes.
7. Preheat the oven to 465°F (240°C) and set a pan of water on the oven floor.
8. Bake for 20-25 minutes.
