# Apple Pie

A Granny Smith apple pie with cinnamon, apricot jam and a lattice of butter-dough strips on top.

## What you need

### Dough

- 3 cups self-rising flour
- 14 oz butter, at room temperature (two 200 g blocks)
- 1 cup sugar
- 1 large egg
- 2–3 tbsp lemon juice or water
- 1 egg yolk (for brushing)

### Filling

- 7 Granny Smith apples
- 2–3 tbsp sugar
- ⅓ tsp ground cinnamon
- 1 tbsp apricot jam
- 1 tbsp breadcrumbs

## How I make it

### Dough

1. Knead the dough ingredients together and chill for 1 hour.

### Filling

1. Peel the apples and cut them into thin wedges.
2. Cook the apples in a pot over the heat, without water, for 25 minutes, until soft.
3. Let the apples cool, then add the sugar and cinnamon.

### Assembling and baking

1. Roll out a third of the dough and line a pie pan with it, making sure to cover the sides too.
2. Spread the warmed apricot jam over the dough, sprinkle with the breadcrumbs and arrange the apples on top.
3. Roll out the rest of the dough and cut it into 1/2-inch (1 cm) strips.
4. Lay the strips over the apples in a lattice and brush with the egg yolk.
5. Bake at 325°F (160°C) for 50 minutes.

## What I've learned

- Any leftover dough can be grated over the apples.
