# Amsterdam Cookies

Soft chocolate cookies with chopped milk chocolate in the dough and white chocolate squares inside, which I bake for only 8-9 minutes.

## What you need

- 7 tbsp all-purpose flour (heaping tablespoons)
- 1 package baking powder (packet)
- 1 tbsp chocolate drink powder
- 2 tbsp cocoa powder
- 1 egg
- ⅔ cup soft butter
- 6 tbsp sugar
- 2 white chocolate bars (3.5 oz each)
- 1 milk chocolate bar (3.5 oz)

## How I make it

1. Preheat the oven to 340°F.
2. Mix all the ingredients together except the chocolates. Use a mixer or mix by hand.
3. Chop the milk chocolate and mix it into the dough.
4. Flatten small pieces of dough and fill each with at least 3 squares of white chocolate.
5. Roll into balls, place on a baking sheet, and bake for exactly 8-9 minutes.

## What I've learned

- It's very important that the oven is fully hot before the cookies go in.
- I don't keep them in the oven more than 8-9 minutes, so they stay soft.
