# Sliced Almond Cookies

Crisp little cookies of sliced almonds held together with a bit of sugar, honey and one egg white, with no flour and no mixer.

## What you need

- 2 cups sliced blanched almonds
- 2 tbsp sugar (20 g)
- 1 tbsp honey (30 g)
- 1 large egg white

## How I make it

1. Preheat the oven to 300°F (150°C).
2. Warm the honey slightly.
3. Put the almonds in a bowl, then add the sugar, the honey and finally the egg white, and stir everything together.
4. With a teaspoon dipped in water, form small mounds and set them on a baking sheet about 3/4 inch (2 cm) apart.
5. Bake for about 30 minutes, until golden.

## What I've learned

- For a big batch I use another version: 4 egg whites, 1 1/4 cups sugar and 1 lb 2 oz (500 g) sliced almonds. Whisk the whites with the sugar (don't whip), gently fold in the almonds, spread cookies with two spoons and bake at 320°F (160°C) for 10-15 minutes, until golden.
- For a more elegant version, I add 3.5 oz (100 g) bittersweet chocolate.
- Store in an airtight container at room temperature.
